Honey Fruit Salad Detox – Big Island Bees

January is a chilly month even here in Hawai‘i. It seems as if after all the parties, feasts and overall stress of the holiday season; many of us succumb to the winter maladies. Coughs, sore throats, and runny noses run rampant!  Luckily, nature provides us with the simple and seasonal cure of fruit filled with Vitamin C.

Citrus grows in abundance during the winter months. Oranges, lemons, limes, tangelos, tangerines, yuzu, etrogs, calamansi, grapefruits, pomelos and kumquats are dotting the landscape with their colorful and cheery fruit. Have you ever popped open a finger lime or juiced a pink lemon? There are so many varieties of citrus growing in Hawaii that I don’t know all of their names! All are delicious and help combat the common cold. Combine citrus and honey and you have a double dose of goodness and protection.

Ingredients:

• 2 1/2 lbs of citrus fruits (oranges, tangelos, clementines, grapefruit, etc) peeled and sliced crosswise
• 3 bananas, sliced
• ½ cup freshly squeezed orange juice
• 2 tablespoons freshly squeezed lemon juice
• ¼ cup Macadamia Nut Blossom honey
• ½ cup unsweetened flaked coconut, to taste
• 3 tablespoons dry roasted, chopped Macadamia nuts (optional)

Directions:

1. Combine sliced fruit in a medium sized bowl, toss lightly.
2. Combine juices with honey and pour over fruit.
3. Sprinkle with coconut.
4. Cover and chill for at least 30 minutes.
5. Before serving, mix in nuts if desired.
