Honey Lemon Cupcakes

Ingredients: For the Cake: 1/4 cup Hoosier Hill Farm Granulated Honey Crystals 1/4 cup Hoosier Hill Farm Whole Milk Powder 1 stick unsalted butter, softened 1/2 cup granulated sugar 2 eggs 1 1/2 cups all-purpose flour 1 tsp baking powder 1 tsp salt

1 Tbsp. lemon juice1 tsp vanilla extract2 Tbsp lemon zest1/2 cup water

For the Honey Buttercream Frosting:

1/3 cup Hoosier Hill Farm Premium Honey Powder 8oz package of cream cheese at room temp1 stick unsalted butter at room temperature1/2 lb powdered sugar (sifted)2 tsp vanilla extract

Instructions: Prep: 25 mins | Cook: 18-20 mins | Yield: 12 cupcakes

1: Preheat the oven to 350F, line a muffin tin with baking cups.

2: Using a stand mixer, cream together butter and sugar on medium-high speed. Add in the eggs and mix until combined.

3: In a separate bowl, whisk together the flour, baking powder, salt, whole milk powder, and honey crystals.

4: In a smaller bowl, combine water, lemon juice, lemon zest, and vanilla.

5: Add half the flour mixture to the butter and sugar, until combined. Next, add in the lemon juice mixture, followed by the remaining flour mixture. Mix until just combined

6: Fill baking cups 2/3 full and bake for 18-20 mins

7: Allow to cool before frosting

To make the frosting:

1: Begin by combining room temperature butter and cream cheese in a stand mixer, until well combined

2: Mix in a generous pinch of salt

3: Slowly mix in powdered sugar and honey powder in small batches, until all of the powdered sugar is incorporated

4: Lastly, add in the vanilla, mixing until fully incorporated
