We choose only the finest drums, prized for their light color, fine crystallization, and crisp floral flavor. We blend organic lemons with our liquid honey — straight from the beekeepers. Using time-tested, traditional methods of making crème honey, each batch is produced in our small on-farm bottling facility. Temperature and humidity are precisely controlled as the honey is slowly mixed, allowing the crystalline matrix to gently develop. Before the honey sets firm, the batch is bottled and then placed into controlled storage for two weeks to finish crystallizing to a smooth, spreadable texture.
