PURE HONEY
Summer 2024 has passed and this year’s harvest is complete. The bees were treated to an abundance of yellow and white sweet clover in addition to a fair amount of alfalfa from the pastures and hay fields of the North Dakota prairie. The resulting honey is very light in color with a delicate sweetness and floral flavor. Not as robust or intense as many other honey varietals, TJO Bees is a great alternative for traditional sweetners.

RAW
Each year we harvest our honey in mid August. After the honey is extracted, it naturally crystallizes within 2-3 months, sometimes sooner. In order to bottle the raw, crystallized honey and maintain all the natural goodness, we warm it slowly to 96 degrees until it reaches a semi-crystallized state which can be bottled into jars.

UNFILTERED
Nothing more. Nothing less. Our honey is neither filtered or strained so it maintains all the beneficial pollen and microscopic enzymes. To liquify the honey, place the jar in a warm water bath until the desired consistency is achieved.
